The way to go with a delicious baked Salmon dinner is pre portioned Salmon filets that come flash frozen. Superstore & Costco are two places I have purchased these before. The prep time is almost nothing and the outcome tastes like you slaved over it / marinated and really did a lot of prep. And these types of hacks are probably my fav. Little effort - bigger reward.

• Preheat to 400F.

• Create a tin foil bed and bake with olive oil for 10 mins (half cook time as per instructions on packaging).

• Meanwhile, create your marinade / flavour kicker and pour on salmon and put back in the oven for another 10-12 mins.Here is a link to a great marinade for salmon in the winter time. (Oven Roasted Maple Salmon from Valerie's Kitchen). Cheers, girlfriends!
